A useful mechanism to study entertainment and places where entertainment happens is to look at the situation from the audiences point of view. Entertainment works in many different sized and styled environments but works best when the audience size and the entertainment are matched. Many different schemes can be created to study the topic but dividing the action into seven different types of activities, types of locations, and audience size actually works.

Another aspect of entertainment is a realistic look at the costs. Here's some prejudiced views from a professional who does renfaires because they are fun. Renfaires are not money making contracts for professional magicians; corporate shows, stage shows, and even a series of birthday parties often put more money into the pocket when all is told. Renfaires are fun, challenging, fun, full of creative people, fun, etc. You will notice the emphasis on fun.

Traditional Spiced Beef
History Note: Served for Yule, New's Eve and Birthdays.
4 lbs. Beef
3/4 cup salt
3/4 cup brown sugar
1 teaspoon saltpeter
1 quart cold water
1 tablespoon black pepper
2 bay leaves crushed
1 tablespoon juniper berries
2 teaspoons ground cloves
1 teaspoon ground nutmeg
1 teaspoon ground mace
1 tablespoon allspice
1 1/2 teaspoons ground ginger
1 teaspoon chopped fresh thyme
1 small chopped onion
1 cup Guinness or your favorite stout
Place beef into a large pan. Add salt brown sugar , saltpeter and water: bring to a boil for 15 min. Cool and transfer meat & liquid into a container. Refrigerate for 5 days, turning meat once a day. Remove meat from liquid and discard the liquid. Mix together all spices and the chopped onion. Rub the mixture into the meat and refrigerate for another four days turning and rubbing meat daily. To cook the beef place it into a pan and cover with water. Cover the pan and bring to a boil, reduce heat and let cook for 3 1/2 hours. During the last hour, add the Guinness to the liquid. When meat is done, allow to cool in the liquid. Drain slice and wrap in foil and refrigerate. Can be served hot or cold.

Shortbread
Traditionally through the centuries,
shortbread was served during the season of the Winter Solstice. Often
served with Syllabub to arriving guests.
1 & 3/4 cups of flour
4 - Tablespoons sugar
Pinch of salt, or to taste
1- stick butter
1- teaspoon farina ( cream of wheat)
1- egg yolk, beaten
2- Tablespoons milk
Vanilla sugar ( optional)
Sift all dry ingredients into a bowl. Cut Butter into cubes and add, using fingers to mix until it is crumbly. Make a well into the center and pour in the egg and milk. Work into a smooth ball and transfer onto an 8 inch cake pan. Spread evenly to the sides, and mark into slices. Prick with a fork. Chill in fridge for 1/2 hour. Place in a 400 degree oven for 5 min and then lower to 300 and cook for another 30 min. Cool completely before removing from the pan.
Vanilla Sugar: Place a vanilla bean in with a jar of sugar with a tight lid. Stir once a day for 9 days. Can be sprinkled on top of shortbread before serving.
Variation: Replace 1/4 cup of flour with ground almonds. OR try it with lemon peel.
Syllabub
A Traditional welcoming drink often served with a shortbread
cookie.
Juice & grated zest of 3 lemons
3/4 cup sherry
5 Tablespoons sugar
3 cups heavy cream
1/2 teaspoon freshly ground nutmeg
Twists of fresh lemon peal
Stir together the lemon juice, grated zest, sherry, and sugar in a ceramic mixing bowl ( do not use metal). Cover loosely with a clean cloth and store in a cool place for about an hour. Strain liquid into another bowl and add cream. Beat with a wire whisk until the cream becomes thick and forms ribbons. Pour syllabub into individual dessert glasses and refrigerate for at least two hours.
Before serving, sprinkle with a pinch of nutmeg and a lemon twist. Serve with a shortbread cookie.

Table, bucket, and boxy counter. Count down counter shown and in 90 seconds lots of stuff produced (cane, coins, big bill, six flower bouquets), then cane and counter vanishes leaving bucket of flowers on empty table. Takes little under 3 minutes to perform.
Zinger, and two KTs walk on. Table with dazzle counter carried by Zinger or already there, bucket with torch to cane, lighter, expandough, newspaper sheet, and coins carried. Flower bouquet up each persons sleeves. Vanishing cane attached to Zinger's back.
"There is a theory in the Las Vegas style of presenting magic (I don't believe it) which states: 'Within the first 90 seconds,
Bring out dazzle counter, turn it around, place it on table, and light it up so it shows "90"
the magicians (us) must DAZZLE the audience (you).'

Stage left KT lights torch and produces cane, puts cane behind Zinger at appropriate time.
Stage right KT does quick Miser's Dream into bucket.
Zinger changes dollar bill to large bill via expandough, drops into bucket.
Stage left KT produces flowers from sleeves,
Zinger produces flowers from sleeves,
Stage right KT produces flowers from sleeves.
Stage right KT puts flowers into bucket and hands to Zinger.
Zinger puts flowers into bucket and hands to stage left KT.
Stage left KT puts flowers into bucket.
Zinger grabs vanishing cane and stage right KT opens newspaper.
Zinger rolls can into paper as KT lowers dazzle counter into table top.
Zinger tears up paper and cane. Confetti cannons go off.
Table top empty. Stage left KT hold bucket with flowers. Stage right KT stands there.
Applause stance.

Construction details of dazzle counter and table top
Basically we have three boxes that nest inside each other. Size of everything revolves around the size of the inner box; I chose close to 8 1/2" X 11" since that is a standard size. Inner box (display) contains the counter and driving electronics. It fits into a shell and the shell fits into the tabletop (black art well) which is third box. Inner box's back is covered in same material as table top (black velvet or felt), sides are same decoration as shell, and front is plastic display. Shell has no back, front and sides are either wood looking or chromed or something, thin edges are black to fade into the table top when shell drops into well. Table top has draping fringe all around to hide depth of box holding shell and display.
Inner box (display) rotates on pegs so shell drops into well, display can move back on table top, and rotate down into shell and tabletop.
Display electronics are just count down timer, drivers for the oversized LEDs, batteries, and three switches. Display uses seven segment concept sized to fit box. Since this is used on a stage with modern lighting (spotlights, etc.) the LEDs need to be brighter than normal to be seen. Three LEDs are used in each of the seven segments (42 LEDs in all). Switches turn display on/off, reset to 90 or 99, and start count down.
Table top fits on outer box. Outer box has bottom that rests of stand top and is smaller than table top so top looks thinner. Confetti cannon is mounted under table top.
Confetti cannon is CO2 bicycle pump piped to tubes that exit on table top.
